Individual hens make an elegant, portion-controlled alternative to a whole roast bird — and the apple-raisin stuffing keeps them moist through roasting.
You'll need
4 Cornish game hens
2 apples, diced
½ cup raisins
3 cups cubed bread stuffing mix
¼ cup melted butter, plus more for the skin
How to make them
Toss the apples, raisins, stuffing mix and melted butter with a splash of broth until evenly moistened.
Loosely fill each hen's cavity and truss the legs.
Rub skins with butter, season well, and roast at 375°F for about 60–75 minutes, until juices run clear.
