A tart cranberry glaze caramelizes onto the roast in the last 20 minutes of cooking, giving you a centerpiece that looks like it took far longer than it did.
You'll need
3–4 lb. boneless pork loin roast
1 cup whole-berry cranberry sauce
¼ cup brown sugar
2 tbsp. orange juice
1 tsp. Dijon mustard
Salt and pepper
How to make it
Season the roast generously and roast at 375°F for about 20 minutes per pound.
Meanwhile, warm the cranberry sauce, brown sugar, orange juice and mustard together until smooth.
In the last 20 minutes of roasting, brush the glaze over the roast every 5–7 minutes.
Rest for 10 minutes before slicing, and serve with the remaining glaze on the side.
